The Italia has a built in thermometer, but an infrared thermometer lets you check the temperature on the baking stone itself. Once the stone temperature and the chamber temperature have equalized, insert your pizza and in about 8-minutes, you will have a perfect crust and melty goodness that everyone is going to love.
